Rosti potatoes recipe

Today's recipe is Potatoes Rosti.
3 medium potatoes
Salt to taste
Black pepper to taste
200g of vegetables (of your choice),
2 slices of mozzarella cheese
Potatoes: Peel the potatoes and place them in a pan, cover with water and bring to the fire. Boil for 10 minutes or until they become softer. Once cooked, place the batter in ice water or let it cool. After cold, grate the potatoes on a coarse grater and season with salt and black pepper to taste.
Filling: Cut the vegetables into pieces and place in a pan with water and salt and bring to the heat. When the vegetables are cooked, remove from heat and let cool.
In a small frying pan put a drizzle of olive oil, put some of the potato on top until it covers the bottom of the frying pan.
On top of the potato, place a slice of cheese and some vegetables.
Put more potatoes on top of the filling until covered, squeeze a little to make it tidy and use a spatula to smooth the sides.
Turn on the low heat, put more oil on the sides and let it fry for 2 minutes, turn the potato on a plate and then put it back in the pan to fry on the other side, put more oil on the sides and fry for 2 minutes.
And it's finally ready to serve.
